Ingredients
- 1/3 Cup Flour
- 1/2 teaspoon Salt
- Dash Pepper
- 1 1/2 lbs. Boneless, Skinless Chicken cut into 1" pieces
- 3 Tablespoons Butter
- 1 Medium Onion, Sliced
- 3 Celery Ribs, Diced
- 2 Medium Potatoes, Peeled and Cubed
- 3 Medium Carrots, Sliced
- 1 Cup Chicken Broth
- 1 Tablespoon Ketchup
- 1 Tablespoon Cornstarch
- 1/2 teaspoon Dried Thyme
Instructions
- Combine Flour, Salt, and Pepper in a Shallow bowl. Coat Chicken Cubes.
- In a large skillet, melt Butter.
- Brown Chicken on all sides.
- Add Onion and Celery, cook for three minutes.
- Stir in Potatoes and Carrots.
- Combine Broth, Ketchup, Cornstarch, and Thyme until smooth. Stir into skillet.
- Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes or until vegetables are tender.
