Any recipe that will combine chocolate and cherries, like this recipe for Chocolate Cherry Cordial Muffins, is destined to be moved to the top of my “must bake” queue. When I was a kid, my maternal grandma always made sure to include a box of chocolate covered cherries with my Christmas gift. It was something that I always looked so forward to–and would later relish every bite!

My love for chocolate and cherry items is still going strong. It was a weekend, no one had anywhere to go, we didn’t have any planned trips to small Indiana towns, so it seemed like a great time to try something new. I turned to my wall of cookbooks  Everyone should have one of those–but limit it only to those that you use or that make wonderful reading. Everyone reads cookbooks for fun, right?

I turned to a church cookbook because, you know, those men and women can really cook! I wasn’t disappointed. This chocolate and cherry muffin recipe is slightly adapted from its original form found inside of Mary and Martha’s Recipes from Trinity United Methodist Church in Rensselaer, Indiana. It’s a keeper!

Chocolate Cherry Cordial Muffins Recipe

This recipe for Chocolate Cherry Cordial Muffins comes from a church cookbook, Mary and Martha's Kitchen in Rensselaer, Indiana (Trinity United Methodist Church).

I slightly adapted this recipe to include some of the cherry juice as well as a touch of vanilla. The "teaspoon" is a table spoon (like what you would eat with kind of spoon). I did not take a precise measurement on that. I think it is a needed addition but to each his/her own.

Ingredients

  • 2 Cups Flour
  • 1/4 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 1/4 Cups Milk Chocolate Chips, Divided
  • 1 Cup Chopped Candied Cherries (I used Maraschino Cherries)
  • 3/4 Cups Milk
  • 1/3 Cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 4 "teaspoons" Cherry Juice (Juice from Maraschino Cherries)
  • 1 Egg

Instructions

  1. 400* Oven.
  2. Grease 12 muffin cups. Set aside.
  3. In a large bowl, combine Flour, Sugar, Brown Sugar, Baking Powder, Baking Soda, and Salt.
  4. Stir in One Cup Chocolate Chips and Cherries.
  5. Set aside.
  6. In a small bowl, combine Milk, Vegetable Oil, Vanilla Extract, Cherry Juice, and Egg.
  7. Stir in Flour mixture only until combined. Do not over-mix.
  8. Spoon into prepared muffin cups. Sprinkle with remaining 1/4 Cup Chocolate Chips.
  9. Bake 18-21 Minutes or until a nice golden brown.
  10. Cool 5 minutes and remove from pan.
