As I was mixing together the ingredients it dawned on me that I wasn’t making the cupcake recipe I thought I was. I was bummed for about half a second until I realized that either way, I end up with cupcakes! These are so good.
Although it wasn’t what I originally wanted, we really enjoyed these. The chocolate frosting was the perfect touch. It would seem like that would be too much chocolate but somehow–it all worked! They made exactly twelve cupcakes. Unfortunately, the original poster did not bother to provide original credit to the recipe so I am unsure of where these originated. Sigh.
Chocolate Chocolate Chip Cupcakes with Chocolate Frosting
A delicious chocolate cupcake recipe that's perfect for the chocolate lover in your life! Chocolate, chocolate chips, AND a chocolate buttercream frosting make one memorable cupcake.
Ingredients
- 1 3/4 Cups Flour
- 1 Cup Brown Sugar
- 1/4 Cup Unsweetened Cocoa Powder
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 Cup Milk
- 1 Egg
- 1/3 cup Vegetable Oil
- 2 teaspoons Vanilla Extract
- 1 cup Mini Semisweet Chocolate Chips
- 1/2 Cup Butter, room temperature
- 1/3 Cup Unsweetened Cocoa Powder
- 2 1/2 Cups Powdered Sugar
- 2 Tablespoons Milk
- 2 teaspoons Vanilla Extract
Instructions
- 350* oven
- Line a 12-cup muffin tin with cupcake liners.
- In the bowl of an electric mixer, combine Flour, Brown Sugar, Cocoa Powder, Baking Powder, Baking Soda, and Salt.
- Combine Milk, Oil, Egg, and Vanilla Extract and add to Dry Ingredients.
- Stir just until mixed and fold in Chocolate Chips.
- Divide evenly between cupcake cups, filling to the tops.
- Bake 20 minutes or until a tester is clean. DO NOT OVERBAKE.
- Cool completely before frosting.
- Cream butter.
- Mix in Cocoa Powder and mix until combined.
- Add in Powdered Sugar, Milk, and Vanilla Extract.
- Beat on high until light and fluffy.
- Frosting will "set."
