Best One Bowl Chocolate Cupcakes Recipe
Paired with vanilla buttercream frosting, these are oh so memorable. I love that they make a big batch, too. It’s great to find a cupcake recipe that makes 24 cupcakes without having to double it.
This adapted recipe from PBS’ Kitchen Explorers was perfection! Because Kid #2 loves the Pinkalicious books, we put pink sparkly sprinkles over the tops. Kids at preschool asked if they could have more. I was so glad to hear that. I don’t normally test out new recipes without trying them first myself but I was in a pinch and these seemed like the solution. Yes, these chocolate cupcakes are a keeper!
Best One Bowl Chocolate Cupcakes Recipe
Scrumpdiddlyumptious and made in one bowl! Mix and bake in thirty minutes or less! From PBS' Kitchen Explorers blog.
Ingredients
- 1 3/4 Cup Flour
- 1 3/4 Cup Sugar
- 3/4 Cup Unsweetened Cocoa
- 1/2 teaspoon Kosher Salt
- 1 teaspoon Baking Powder
- 2 teaspoons Baking Soda
- 2 Eggs
- 1 Cup Milk
- 1/2 Cup Vegetable Oil
- 2 teaspoons Vanilla Extract
- 1 Cup Boiling Water
Instructions
- 350* oven.
- Line two muffins tins with paper liners and set aside.
- Combine Flour, Sugar, Cocoa Powder, Salt, Baking Powder, and Baking Soda in bowl of electric mixer.
- Add in the Eggs, Milk, Vegetable Oil, and Vanilla Extract until combined.
- Pour in Boiling Water a quarter cup at a time, beating well between each addition.
- Fill cupcake liners 2/3 full with the thin batter.
- Bake 350* for twenty minutes.
- Cool before frosting.
